Naturally sweet fermented rice paste


I fermented rice and rice koji (malted rice) in my bread maker for 10 hours to make a naturally sweet fermented rice paste.
It is a perfect sugar-free, vegan sweetener with a rich flavour.
Its texture is like jam because the fermentation process breaks down the rice starch into natural sugars.
By adding hot or cold water to this paste, you can make Amazake, a traditional Japanese sweet fermented rice drink.
Even though it has 'sake' in its name, it is completely non-alcoholic.

I tried baking bread with the rice paste as an alternative to sugar. I used olive oil as an alternative to butter.
It tasted great. Without the strong flavour of butter, I could really taste the natural flavour of the wholemeal.
I'm going to spread the rice paste on a slice of bread. It's bound to be delicious.

I also mixed the rice paste into some soy yoghurt. It tasted great, too.
I am really enjoying my plant-based diet.
